Its time for a Sunday special recipe and today I made this hearty Peasant style scrambled eggs.This recipe was inspired by a dish from the Prima Donna of TV Cookery shows- Nigella Lawson.
Very easy and very healthy breakfast which can be whipped up with ingredients easily available in your kitchen. This recipe is perfect for bachelors, college kids, young couples who want to enjoy a hearty meal without slaving over their cooktops.
So lets get started :)
Ingredients that you'll need for this dish.
Three eggs with yolks
Herbs & spices- Oregano,Rosemary,peppercorns mixed herbs
Salt to taste
Heat 2 tbsp vegetable oil /olive oil in a non stick pan,once the oil heats up add garlic cloves tot eh oil. Keep sauteing
Add chopped onions to the pan,saute for about 2 mins to sweat the onions down slightly while retaining a bit of crunchiness.
Add carrots and french beans to the pan and again saute for 2-3 mins.
Lastly add boiled potatoes to the pan.After adding the potatoes don't stir them around too much as the boiled potatoes will crumble.Add the herbs and crushed peppercorns to the vegetables and season with salt to taste.
For the Vegetarians and Vegans the stir fry vegetables can be a great breakfast option, you can add a bit of bechamel sauce to this and enjoy this sans the eggs.
For the Non vegetarians-Whisk up the eggs.
Next add the whisked eggs to the pan of vegetables.
Scramble the eggs and the vegetables,the vegetables should be coated in the scrambled eggs, your dish at this stage should look like the pic below.
Serve this hot with some ketchup and crushed pepper on top and enjoy!

- 1 small capsicum chopped in big chunks
- 1 boiled potato( leave the skin on the boiled potato) chopped in big chunks
- 1 carrot chopped in small chunks
